We have a new addition to our portfolio, and we are very happy to share it with you.
Cava Rovellats is a gem hidden underground in the heart of Penedés, cava that transmit know-how and deliver value above their price.
Its history begins when Josep Vallés Rovira founded the cellars at the beginning of the 20th century, choosing a spectacular centenary place that dates back to nothing more and nothing less than the 15th century.

Five centuries of history and a unique arquitecture
Visiting Rovellats is like traveling back in time.
Its medieval architecture farmhouse and modernist gardens dating back to 1303 provide a fascinating experience to everyone who visits them.
If, in addition to good wine, you like history, this is your place.
Rovellats has one of the best kept secrets in Penedés. One hidden 12 meters underground and unique in the world for its structure.
It is their cellar, called “La Rotonda”. Shaped like a 6-pointed star and a central roundabout, it is the place where magic happens and the delicate bubbles of their cellars are refined.
Own Vineyards
Rovellats has 55 hectares owned vineyards, divided into 150 plots and located in less than 300 meters from the winery
They are accompanied by a particular microclimate, that of "Rovellats", which provides unique characteristics to its vines.
The control of 100% of its vineyards ensures their quality and reflects Rovellats' dedication to preserving the integrity and authenticity of its cava.
Most of its vineyards are planted with native strains such as Macabeo, Xarel·lo and Parellada.
Their harvest is done, of course, manually, with a rigorous selection of musts and a single pressing that maintains the naturalness of the product from its origin.
Sustainability
Rovellats shows a strong commitment to sustainability, which is reflected in all its actions:
➔ The winery is powered by renewable electrical energy.
➔ They purify 100% of their water.
➔ All of its vineyards are certified as organic by the CCPAE.
➔ They have reduced their use of packaging by 35% and the weight of their bottles by 8%, thus minimizing their environmental footprint.
Careful elaborations and long aging
Patience is a virtue, and perhaps one of those that best defines Rovellats. All their cava goes through long aging periods. From 2 to 10 years.
A patient and calm wait, until time does its work and slowly gives the flavor, aromas and unmatched characteristics that only the passing of days, weeks and months know how to deliver.

Philosophy that Rovellats follows in all its elaborations and that results in perfect harmony cava that transcend time.
Another secret that its delicate bubbles keep is the control of the temperature during the second fermentation. Exactly 13º Celsius, the perfect temperature to create finer and more subtle bubbles that provide its renowned elegance.
Rovellats' patience, care and dedication can be seen in the flavor and sensations that each of its cava emanate.
